Air is not product

What to store
Store degrees Celsius, time, device name, and probe-health. Do not average a failed probe into the chart. Battery life at the scheduled interval is up to about two years on that kit. Faster spot checks shorten the window. A 0.3% field failure rate across 2.5 million deployed units is manufacturing history, not an inspection outcome.
Door and wash-down
A door contact explains a warm spike. A leak kit outside the room covers wash-down water. Neither replaces the temperature column in the HACCP export.
